Description
It is less sweet than traditional dark chocolate and its strong flavour is more intense due to the higher cocoa solids content. It is therefore recommended for use in recipes where the intensity of flavour is important rather than the fluidity of the chocolate.
(e.g. in a recipe for a character ice cream, the high cocoa solids content may be detrimental to the consistency of the ice cream, but this can be avoided by using chocolate essence)
